NACHOS

NACHOS VARIATIONS
 

INGREDIENTS:

PORK RINDS (CHICCARONES)
VEGETABLE OIL SPRAY
GRATED CHEESE OF CHOICE
HUNGARIAN PAPRIKA OR CHILI POWDER OF CHOICE
SALT
BLACK PEPPER (OPTIONAL)
 
PROCEDURE: Spray microwave-safe plate with vegetable oil.
Place a layer of pork rinds on the plate, cupped sides up.  Cover the rinds with as much cheese as you like or can tolerate, then microwave until the cheese is melted. (A full sized dinner plateful takes about 1 minute; microwave ovens vary in power, watch!)

Remove from microwave, sprinkle with paprika or chili powder to taste, salt and optional black pepper.  Enjoy!

COMMENTS:
When I make this (sometimes for breakfast!), I use about one-half cup of Mexican four cheese blend (cheddar, Monterey Jack, Asadero and Queso Quesadilla cheeses).  I count this amount as 3 grams ECC for the cheese.  I also use a hot Hungarian paprika, about 1/2 teaspoon, so my total ECC is less than 4 grams ECC.  I usually skip the black pepper, as the paprika is spicy enough for me.
 
NACHOS VARIATIONS
 
Add cooked ground meat (poultry, beef or pork), or shredded cooked meat, or cooked shrimp before topping with cheese and microwaving.  Adds zero carbohydrates but lots of protein.
 
Crumble cooked 0-carb bacon on top of melted cheese.
 
Sprinkle with cinnamon and/or nutmeg instead of paprika/chili; more of a sweet Nacho treat than a savory dish.  Cinnamon has [0.587] grams ECC per teaspoon, nutmeg [0.626], but you'll only use about 1/4-1/2 teaspoon total.  Add a little low-carbohydrate sweetener if desired, but remember the carb counts!  (One packet of Splenda has approximately [0.8] grams ECC.)
